
New York has a long-standing reputation and title of being the melting pot of the world. The diversity and inclusiveness within New York State is what makes it so unique. Finding a culture, race, or nationality not represented in New York would be hard-pressed. Unfortunately, Upstate New York needs to be included in the conversation. A huge immigrant population is often overlooked, undeserved, and underrepresented in Upstate New York. The Columbia County Sanctuary Movement has a mission to strengthen immigrant power around the region. Our taste of the world virtual cooking series will highlight a popular national dish from countries where many of our community members originate from. The sharing of a meal has been a tradition since the beginning of time that celebrates family, culture, the exchange of thought & philosophies, and most importantly, the preservation of history through story telling.
Participants will cook in real time with Chef Desla James during this fun virtual interactive cooking class. Within the comforts of your homes, you will learn how to make a popular Jamaican dish: Brown stew chicken, rice & peas, cabbage, and fried sweet plantains from a Jamaican native herself. Brown stew chicken is a staple dish in many Caribbean Islands, each bringing a unique twist and flavor. Chef James catered our 5th year anniversary celebration in 2022, and it was a huge success.
Upon registration participants will receive a confirmation email that will contain the following:
1.) Zoom link for access to virtual cooking class on June 25, 2023 from 2:00 PM - 4:30 PM.
2.) Ingredient list and link to virtual Insta cart.
Who is Chef Desla James?

My love for cooking started at a very young age. It is not unusual growing up in Jamaica for kids to start cooking so early. I was one of many who had a love for cooking in my family, and I am fortunate to have such a great support system. My family drove me to begin my incredible journey of becoming a Chef. I wouldn't be the Chef that I am today without them. There were many trials and tribulations along the way, and it wasn't easy. Yet here I am!
I started my Culinary training at Schenectady Community College. Unfortunately I had to take a step back from my education to focus on other things in my life, yet my passion and love for cooking weighed heavily on my mind. I continued pursuing my dreams, and enrolled at Augusta Esscoffier Culinary Art School. I graduated in 2022 with 2 degrees! That was indeed a PROUD moment for me. I am currently employed with Sedesco, where I prepare delicious meals at St Margarets for Adult Kids; And I Love every minute of it. I am excited to share a piece of my country's cuisine, which has always been a staple in my household as a child as much as it is now with you all.
